The Base Chocolate Truffle Recipe
Makes about 20-24 balls
Ingredients:
· 8 oz (225g) high-quality dark or semi-sweet chocolate (finely chopped)
· 1/2 cup (120ml) heavy cream (or full-fat coconut cream for dairy-free)
· 1 tbsp unsalted butter (optional, for glossiness)
· 1 tsp vanilla extract (or a pinch of salt)
Instructions:
1. Make the ganache: Place the chopped chocolate in a heatproof bowl. Heat the cream in a small saucepan until it just begins to simmer (don't boil). Pour the hot cream over the chocolate, let it sit for 2 minutes, then stir slowly from the center outward until smooth and glossy. Stir in the butter and vanilla.
2. Chill: Cover the bowl with plastic wrap and refrigerate for 1–2 hours until firm enough to scoop.
3. Roll: Scoop rounded tablespoons of the mixture and roll quickly between your palms to form balls. If they get too sticky, chill the bowl again.

How to make the 4 varieties shown:
1. Classic Chocolate Drizzle (Left)
· Prep: Roll plain balls.
· Decoration: Place them on a parchment-lined tray. Melt extra chocolate (or use chocolate melts) and put it in a piping bag or zip-top bag with a tiny corner snipped off. Drizzle back and forth over the truffles.
2. White Coconut (Middle)
· Prep: After rolling the balls, roll them in unsweetened shredded coconut until fully coated. Press gently so the coconut sticks.
3. Crunchy Nut (Front Right)
· Prep: After rolling the balls, roll them in finely chopped roasted peanuts (or almonds/hazelnuts). For extra stickiness, you can dip them in melted chocolate first, then roll in nuts.
4. Dark Crumb / Cookies & Cream (Back)
· Prep: Instead of a smooth ganache, crush up 8 Oreo cookies (or similar chocolate cookies) into fine crumbs. Mix the crumbs into your chocolate ganache base before chilling. Roll the balls.
· Decoration: Sprinkle the outside with a few extra crushed cookie pieces.
💡 Pro tip: If you want your truffles to look perfectly round and shiny like the image, wear thin latex
