Funorange fact: For centuries, India was a major spice producer and exporter. They specialized in cardamom (elachi), cumin (jeera), cloves, turmeric (haldi), cinnamon, and pepper. Thailand, having also their own burst of spices, specialized in dishes with coconut milk, Thai chilies, galangal, kaffir lime leaves (bai makrut), and lemongrass (takrai).
Spices were also used in medicine, religious ceremonies, and for trade/currency. Turmeric (haldi) is known for its anti-inflammatory and antiseptic properties, used to soothe digestion, ease pain, and promote wound healing. Galangal is used to treat coughs, colds, and inflammation. Kaffir lime leaves (bai makrut) beyond their citrusy flavour, these leaves have antifungal and antibacterial properties.
