Food research and development - Green Bean Soup and Sago with whatever you have in the kitchen except Pandan Leaves and Gula Melaka. So three types of sugar, cream, vanilla extract and several tablespoons of coconut milk. Not authentic. But not bad either. We just felt like having one for tea so whever goes. Like my chef used to say, use whatever you have, its called cooking, not rocket science.

Food research and development - Alaskan Po***ck Fish & Chips w/Wasabi Mayo. Not a classic recipe but borrowed from Fallows and chef Haston with our own twist. Looking for that high end puffy airy crispy texture but didnt get there. Still very good, although think the mayo would need some fake wasabi push next time instead of a real one.

Food research and development - Thai Yentafo Pink Stir Fry Chicken w/Chinese Egg Fried Rice. A Thai take on the red fermented bean curd sauce, adapted by the southern Thai region into a protein stir fry typically using beef. The dish spread further down south into Malaysia, popularized by Tomyum shops across the country. Thais however used the sauce in their Pink Noodle Soup instead. It would be interesting to see this in western dishes. Or maybe not. But come on over if you're feeling brave.

Food research and development - Cajun Fried Rice w/Cajun Spiced Chicken and Mustard Sauce. The savoury smoky country style flavors of rural Louisiana. More Cajun than Creole cooking, and we think it works. Testing the bar bones version but the full presso should be glorious.

Food research and development - Linguine Aglio Olio Condimento al Peperoncino, aka Linguine Sambal Balado. Nothing italian about this, but something about oriental flavor which simply works. Mild confit chili sauce just for the smoky savoury flavor w/o the heat. Obviously we can dial up the heat to the roof. Just how spicy do you want?

Food research and development - Basic Kare Raisu w/Chicken Katsuretsu and Crispy Caramelized Chicken Skin. Technical cooking. I regret using fancy bbq spices for chicken skins for this crispy technique. Just salt next time. Thats it. Keep the color and flavor natural than over the top saturated. Kondo wa ganbarimasu!
