Meet Ama Ebi, the opening snack at ARAYA.

Delicately sweet ama ebi is marinated in clarified tomato water, then layered with an ethereal tomato meringue — a delicate interplay of sweetness, airiness and deep, lingering umami.

An exceptional evening at ARAYA celebrating Almaviva — one of Chile’s most distinguished and iconic fine w**es. A dinner where w**e is not simply paired with food, but where food becomes part of the story of the w**e.

Born from the celebrated partnership between Château Mouton Rothschild and Co**ha y Toro and rooted in the exceptional terroir of Puente Alto, Almaviva is a singular expression of French w**emaking heritage interpreted through the character of Chile.

The evening opens with EPU 2023, Almaviva’s second w**e, before moving into a rare vertical of the Grand Vin: Almaviva 2023, 2021 and 2011.

Four w**es. Three vintages of the Grand Vin. One extraordinary journey through time — from youthful precision and vibrancy to the depth, complexity and refinement that only age can reveal.

The menu was created around the w**e, with Chefs Francisco and Fernanda crafting each course around the four bottles, allowing their character, terroir and evolution to shape the dining experience.

From Singapore to India, ARAYA travelled to Bengaluru for a special collaboration at The Leela Palace, sharing a menu inspired by our Chilean roots and the story behind our cuisine.

It begins around the asador, where Picaña evokes the warmth and ritual of Sunday family lunches — food, fire and the people gathered around the table.

It travels across the Pacific to Rapa Nui, where our Moai Popsicle pays homage to one of Chile’s most enduring cultural legacies.

And it rises into the Andes, brought to life in our Private Dining Room through a sweeping mural that transforms the space into a landscape of Chile.

Patagonia Private Dining Room

Set against a hand-painted Andes mural, the room features a quartzite table, soft porcelain lighting and discreet privacy, creating an intimate setting for executive dining, special occasions and private gatherings.

Here, Chef Francisco’s bespoke menu brings Pacific and Andean flavours together with Japanese finesse, alongside Chef Fernanda’s Chocolate Experience Room, where handcrafted chocolates showcase the flavours of Chile and South America.

Smoky mezcal meets the bright, fruity notes of pisco, layered with sweet vermouth and Campari. Infused with 66% Mexican cacao, it brings a delicate chocolate richness to the bittersweet balance, adding depth, warmth and an indulgent finish.

M5 Wagyu Striploin, elevated by the distinctive flavours of the Chilean coast.

Grilled over charcoal for a deeply caramelised crust and tender, blushing centre, the rich marbling of the wagyu is balanced by a vibrant cochayuyo chimichurri — earthy, herbaceous and subtly saline, with a taste of the Chilean sea.
