From the grill to the table.

Our whole barramundi is seasoned and grilled over the applewood fire until the skin is beautifully charred and the flesh remains tender and delicate. Finished with two sauces, each half offers a different expression of the catch.

One half is paired with rich romesco and roasted almond, while the other is finished with a vibrant herb sauce and chive. Served with caramelised lemon for a final lift.

Watch it come together, then cut into something worth waiting for.
