Finest Songkee's Cuisine is helmed by Mr Chua Chin Heng (nicknamed 'Ah Heng'), cousin of the former owner, Mr Chua Poh Seng. Ah Heng started helping out at his father’s Song Kee Fishball Noodle stall as a teenager. He has always been involved in the stalls's operations, such as scraping and slamming fish flesh for the fishball paste, shaping fish balls, wrapping fish dumplings, making minced meat
balls, preparing the chili paste and cooking the noodles. After 20 years of apprenticeship under his father’s strict supervision and guidance, Ah Heng has acquired full mastery of the family’s traditional fishball secret recipe. Today, he is also the chef and successor of Song Kee Kway Teow Noodle Soup at Toa Payoh Lorong 5. Besides fishballs, Finest Song Kee Cuisine plans to introduce more fish meat-based delicacies over time, in appreciation of customers who have relentlessly supported the business all these years.
