Jade Perch: Prepared with restraint to preserve its natural sweetness, paired with homemade dried scallop XO sauce, fresh asparagus, and superior first-draw soy sauce.

Golden Ebi Claypot Rice: Caramelised grains layered with seaweed butter, sakura ebi, and tobiko.

Hot and Cold “Orh Nee” Yam Paste: Silken taro milk and coconut ice cream meet aerated pumpkin sponge and crisp shallots.

Anchoring the experience of The Gallant 9-Course Prosperity Menu is The Gallant Stallion, a modern take on the traditional Yusheng. The quintessential dish comprises horseradish, horsetail tea, smoked salmon, and fragrant charcoal oil, preserving its ceremonial significance.

From contrasting crispy mushrooms to candied nuts and roe, The Gallant Stallion mirrors prosperity arriving from many directions through the prosperity toss or lo hei ritual. Accompanied by Stallion Potion, available in both alcoholic and non-alcoholic versions, this sumptuous sauce invites guests to participate, not just for prosperity, but for a season shaped by intention and togetherness.
