Talking about "Indian food" can be difficult, because the concept contains so many different types of dishes and cooking techniques. The boundless variety of variables when it comes to Indian food is the result of several factors. India is vastly vast and the landscape shifts between snow-covered mountains in the Himalayas and tropical beaches to the south, thus having different conditions and commodities to offer its inhabitants. The food culture has also been influenced historically by influences from several invasive waves of peoples. Indian cuisine has thus been influenced by, for example, the Middle East and Europe. "Indian food" is therefore a very broad concept, because the flavors and foodstuffs on the Indian continent vary with geographical conditions, religious rules and also the family's traditions. In conclusion, one may say that Indian food is for the most part vegetarian because of religious reasons. It contains much more lenses. Spices are used more widely than in the West. Spice mixtures are very central and give the food the taste we often call "Indian".
