One moment, green berries. The next, deep blue, almost black clusters appearing across the field.
This is veraison, one of the most fascinating moments in the life of a grape.
At Halldora, we grow 21 different grape varieties and they don’t all enter veraison at the same time. Each variety has its own rhythm, which means the vineyard slowly transforms, row by row, variety by variety.
The berries soften, sugars begin to accumulate and acidity gradually changes. Inside each berry, the chemistry is shifting, building the flavours, aromas, colour and structure that will eventually shape the wine.
The grapes still have a few weeks of work to do before we can call them harvest-ready.
Because the best harvest date isn’t found on a calendar.
It’s found in the grape.
