Ingredients

10 ozs shortbread cookies (finely crushed or ground in food processor, I used gluten-free sugar cookies)
1 tbsp white sugar (granulated)
1/4 cup butter (melted)
16 ozs cream cheese (I used low-fat, at room temperature)
3 large eggs
8 ozs sour cream
1 cup white sugar (granulated)
2 tbsps Gold Medal All-Purpose Flour (or gluten-free flour blend)
2 tsps vanilla extract
1/2 tsp ground cinnamon
1/2 tsp cinnamon
1 tbsp white sugar

Ingredients

2 ozs unsweetened chocolate (chopped)
2 lbs cream cheese
1 tsp vanilla extract
1/4 tsp almond extract
13/4 cups sugar
4 large eggs

Ingredients

9 ozs chocolate wafer cookies
6 tbsps unsalted butter (melted)
4 bars cream cheese (8 ounces each, room temperature)
11/2 cups sugar
1/2 tsp salt
4 large eggs
1 cup sour cream
8 ozs semisweet chocolate (melted)
ganache (Chocolate, for topping)

Chocolate Peanut Butter Cheesecake

Ingredients

9 ozs chocolate wafer (such as these; the cookie portion of these are best for homemade crumbs)
6 ozs semisweet chocolate
1 cup chips
1/2 cup brown dark firmli pack sugar
7 tbsps unsalted butter (melted and still hot)
1 cup whipping heavy cream
13 ozs semisweet chocolate (or bittersweet, chopped)
2 tbsps creamy peanut butter (optional)
16 ozs cream cheese (455 grams, at room temperature)
11/4 cups creamy peanut butter
1 cup granulated sugar
3/4 cup sour cream
3 large eggs
2 tsps vanilla extract
1/3 cup whipping heavy cream
41/2 ozs semisweet chocolate (or bittersweet, chopped)
1 tbsp creamy peanut butter (optional)
