Haven’t posted here recently but I’ll try to get back with some of my recent cooking.
Gefilte fish is originally Ashkenazi Jewish dish that found its way to Polish winter holidays menu. Traditionally made with fish, here’s a great and simple alternative using aubergine.
I have to say that few simple ingredients can make incredibly delicious dish!

Fergie’s Kitchen No More!
Hopefully by end of this year I will open new and fresh .nstuff cafe in Bucharest, with all food menu branded as Haus Of Beets!
Main idea is to keep all vegan food and catering under the roof of old Fergie’s as it always was but make it easy to guess what is it all about.
There is not many vegan spots in Bucharest and hopefully my dishes will be as loved as they were in Scotland and Mongolia.
I’ll be back soon with all fun and fusion dishes with lots of influences of Polish, Romanian, Scottish, Mongolian and East Asian cuisine to create a real vegan culinary voyage.
Truly can’t wait for this new journey and I’m so excited but also grateful for all kind words I receive from you all.

The day has come!
Since the summer all of you probably have noticed that Fergie’s been less active on Scottish ground and went on long journey visiting 12 different countries in just 3 months with most of this time in stunning Mongolia working with bunch of amazing people.

I needed some time away from stuff yet the journey surprisingly took slightly different path than I expected.
As a result Fergie’s and .nstuff is moving abroad and at some point in 2025 it will reopen its door in Bucharest. I know it might quite surprise some of you but I genuinely think that this is great time for fresh start and new adventures.

I just want to say thank you to everyone who helped me to make my dream come true and supported me along the way. Thank you to all team who have worked so hard in last few years. But especially massive thank you to all of YOU who tried my food- without your hunger and support I would not be able to do so many cool things. Hopefully this experience will help me to make Romania more vegan.

You can still try the food and say your goodbyes this week at Winter Westfest in Dundee on Thursday, then Saturday at Big Switch On in Kirkcaldy and very last gig at Dundee Hooley on Sunday.

Until I settle in Bucharest Fergie’s will continue being space for food ideas, recipes and reviews of places I visited.

Also, if there’s any emails or messages I am still due to reply to, please bear with me as these days are incredibly intense.
