Beef and Scrambled Egg Recipe

Ingredients:

- 2 large tomatoes, chopped
- 2 eggs, beaten
- 150g beef, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp sugar
- Salt and pepper to taste
- Cooking oil

Instructions:

1. Marinate the Beef: In a bowl, mix the sliced beef with soy sauce, a pinch of salt, and pepper. Let it marinate for about 10-15 minutes.

2. Scramble the Eggs: Heat a little cooking oil in a pan. Pour in the beaten eggs and scramble until just set but still soft. Remove from the pan and set aside.

3. Sauté Garlic and Beef: Add a bit more oil to the pan. Sauté the minced garlic until fragrant. Add the marinated beef and cook until browned.

4. Add Tomatoes: Add the chopped tomatoes to the pan and cook until they soften and release their juices, forming a sauce.

5. Combine Everything: Return the scrambled eggs to the pan. Add sugar, salt, and pepper to taste. Mix everything well, allowing the flavors to combine.

6. Serve: Serve hot, preferably over rice.

Sweet and Sour Pork Ribs Recipe:

Ingredients:

1. - 5 lbs pork spare ribs, cut into individual pieces
- 1 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 inch ginger, minced
- 1/2 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 2 tbsp ketchup
- 1 tbsp cornstarch
- 1/4 cup water
- Sesame seeds for garnish

Instructions:

1. Boil the ribs: Place the ribs in a large pot and cover with water. Bring to a boil and cook for 20 minutes. Drain the ribs and set aside.

2. Sear the ribs: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ribs and sear on all sides until browned.

3. Make the sauce: Add the garlic and ginger to th
e skillet and cook for 1 minute until fragrant. Stir in the soy sauce, rice vinegar, sugar, and ketchup. Bring to a simmer and cook for 5 minutes until the sauce has thickened slightly.

4. Braise the ribs: In a small bowl, whisk together the cornstarch and water. Add the cornstarch slurry to the skillet and stir to combine. Add the ribs back to the skillet and stir to coat with the sauce. Reduce the heat to low, cover, and simmer for 1 hour, or until the ribs are tender.

5. Garnish and serve: Garnish with sesame seeds and serve hot with rice.

Ingredients:
• 500 g (1 lb) boneless chicken breast or thigh, cut into bite-sized pieces
• 200 g (7 oz) mushrooms, sliced (button or shiitake work well)
• 1 medium onion, sliced
• 3 cloves garlic, minced
• 2 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tsp sugar
• 1 tsp cornstarch, dissolved in 2 tbsp water
• 1 tsp freshly ground black pepper (adjust to taste)
• 2 tbsp vegetable oil
• 1/4 cup chicken stock or water
• Optional: spring onions for garnish



Procedure
