Quinta do Côro is located near Sardoal, on a family owned property for four generations.

They use their own vineyards and orchards, and are very dedicated to developing superior homemade products, and without adding any food colouring or preservatives.

What is tamping?✨

Tamping is the method baristas use to turn the loose coffee grounds into a tightly compressed, evenly dispersed puck within the portafilter. This is where the water and coffee will come in contact when it's brewing.

Why is it necessary?✨

First of all, the espresso needs to be compacted far enough to create a little space between the top of the coffee and the screen through which the water comes out of the espresso machine.

The other main reason for tamping is that water always takes the easiest way through. Therefore it always takes the way of least resistance, and wouldn‘t properly extract the coffee. But if those grounds are tightly pressed & levelled, the water has no choice but to squeeze through it evenly, picking up all kinds of flavor along the way.
