É o caso da história da gastronomia açoriana, neste capítulo, terceirense, disponível para o público. Nasce na tasca, instalação improvisada onde estão disponíveis petiscos/refeições rudimentares e bebidas - essencialmente vinho local - passa pela taberna, com uns petiscos apresentados ao balcão da venda/mercearia e u
ma maior variedade de bebidas, evolui para um botequim, com mais conforto e recato, e acaba numa casa de pasto/restaurante, face à procura crescente por parte dos fregueses, onde os denominadores comuns são a tradição e a boa comida à moda antiga. Na Quinta do Martelo, pode observar-se e experimentar toda a evolução da cultura gastronómica, mas também etnográfica e civilizacional dos Açores ao longo dos séculos. A tasca, a venda/mercearia, a taberna, o botequim, a casa da comida/casa de pasto, o restaurante, tudo isto que está aqui representado e pode ser observado, na sua evolução. Na Quinta também se pode comer em espaços diferentes, desde numa cozinha, sala de jantar, no alambique, numa adega, olaria, oficina de ferreiro, ao ar livre - onde havia lume, os trabalhadores faziam os seus petiscos. A Quinta do Martelo é um centro interpretativo fidedigno de toda esta panóplia de vivências. No restaurante tradicional da Quinta do Martelo, denominado “A Venda do Ti Manel da Quinta”, come-se do melhor da culinária tradicional da Terceira e dos Açores, sabores já premiados com o 1º lugar no Concurso “Gastronomia – Património Nacional” e no “Gastronomia – Património Cultural" entre outros variadíssimos prémios a nível nacional e internacional. Sometimes it develops and becomes a speciality. This is the case with the history of Azorean gastronomy, which is available to the public in this chapter about Terceira. It begins in a tasca, an improvised facility where rudimentary snacks/meals and drinks - essentially local wine - are available; it moves forward into a tavern, with snacks displayed at the counter of the tavern/grocery store, and a greater variety of drinks; it evolves into a pub, with more comfort and privacy; and turns into a eating house/restaurant, due to the growing demand from customers, where the common denominators are tradition and good old-fashioned food. At Quinta do Martelo, you can observe and experience the evolution of not only the gastronomic, but also of the ethnographic and civilizational culture of the Azores over the centuries. The tasca, the tavern/grocery store, the pub, the eating house, the restaurant, they are all represented here and their evolution is on display. At Quinta do Martelo you can also eat in different areas, from the kitchen to the dining room, by the alembic or in a wine cellar, a pottery, a blacksmith's workshop, or outdoors - wherever there was a fire, the workers made their snacks. Quinta do Martelo is a reliable intrepretive centre of this panoply of experiences. In the traditional restaurant of Quinta do Martelo, called "A Venda do Ti Manel da Quinta", you can eat the best traditional cuisine of Terceira and the Azores, flavours that have already been awarded 1st place in the "Gastronomy - National Heritage" and "Gastronomy - Cultural Heritage" competitions, and received many other national and international awards.
