Trying to fit austa's 2025 into only 20 slides for IG has been almost impossible...but here we go!

The year began on a high as we gained our very first accolade from , attending a surreal award ceremony to collect 1 🌞 alongside some of our heros, restaurants and chefs across Portugal that inspired to create our own.

Back at the restaurant, the produce poured in; wild mushrooms, plants a plenty, seafood from seasnails to blue fin tuna, turbot to pink dentex, red porgy + brill all sourced from our Algarvian lands and seas. Iberian black pork, heritage beef, game + guinea fowl - all changing with the months to reveal the best at the height of their season, transformed by our team, David, Bia, André, Carlos, Rodrigo, Sonia, Sabbir, Hasib, Chatu + Paulo.

In the garden, Barbara's green fingers gave us the best beetroots before she joined André, Bea, and David in the orchard for our very first olive harvest. We had vibrant tomatoes until October, leeks and cabbages, pomegranates, mangoes + endless citrus. And what we couldn't use fresh we pickled, preserved + fermented, nothing to waste.

The menu shifted constantly as pushed the team to create and adjust, always putting produce first. Relentless experiments, testing + trying of techniques to ensure we represented the beauty of the ingredient + the integrity of its producer, while offering dishes that were simplistic but technical behind the scenes, flavour at the front with no frills.

Bea, Barbara, Lara, Luisa, Leyla + Gio hosted guests from near + far; Uruguay, Argentina, Taiwan, Finland, France, Lithuania, Singapore, Denmark (inc. king 🥹) + many more with their individual blends of hospitality, curiosity + warmth - brightened by knowledge from 'austa university', our learning sessions that go beyond the plate.

With highs, came lows, immense challenges we never could have imagined. But that brought growth, fulfilment + resilience - a deeper sense of purpose propped up by our team, family, friends and our kindest clients. Grateful for every lesson, every visitor, every producer, and every plate - we step into 2026 grounded, hungry, and ready for whats next!

NYE 2025!

Memories from a big time preparation and a night of feasting to see in the New Year. This year we cosied into the dining room as it poured outside, we lit every candle in sight and rustled up the best of the best of the seasons most delectable delights - simple, honest ingredients from our favourite producers, transformed through ideas contributed by the whole team - a collaborative effort of creativity!

A huge thank you to everyone who came that night, and to everyone who has visited us this year. And a special obrigada too, to our fervently loyal guests who have continued to support us this year - only our 2nd - with their endless curiosity and care. Always checking in to ask us how it's going, bringing us treats, tips and treasures from their own gardens) and returning again and again always with positive vibes and energy. We can't tell you how much that means.

At austa, we instill in our team that service is nothing without hospitality. Unconditional and unwavering. This is our home and we welcome others in from all over the world if it were theirs. For those yet to come, our home is waiting! .

A sneaky peek at the NYE menu of all menus...
..and the only true way to see in 2026 in the Algarve; honest ingredients, local producers, traditions and stories.

Final spots remain for our festive feast when we'll gather for a fun and cosy candlelit feast to see in 2026 in the Algarve.

Our plates will be filled with winter season ingredients, prime produce from the garden and some of our favourite farmers and producers discovered this year. We'll be throwing in some Portuguese traditions and upping the celebratory treats too - glasses brimming with grower champagne, lashings of Andalusian truffle and dollops of sustainable caviar from Granada, small-batch cocktails infused with winter orchard pickings, and an optional wine pairing that will include some rare bottles from our favourite winemakers.

For those who wish to linger 'til midnight, we'll be toasting to fresh pages and pastures with bubbly and something sparkly.

Tickets 250EUR per person. Includes a welcome cocktail, a multi-course menu and champagne at midnight.

Positioned uniquely within the food chain, chefs can choose to make specific choices that protect soil health and biodiversity, to work with ingredients that contribute to a more regenerative and circular system. At the same time, every choice made at the table by our guests reinforces the kind of food system we collectively support. Together, these actions become powerful tools for meaningful change.

is located in the Algarve, one of the regions in Portugal where urgent change is needed, a place where fragile ecosystems and wild areas are being eroded daily by intensive agriculture, relentless tourism and development - forces that displace native species and allow invasive ones to thrive.

These moments summarise our fun pop-up with Lisbon's first zero-waste, regenerative restaurant .sem. A night that, in addition to smashing out delicious dishes, proposed food as an ecological intervention by honoring the native species of the South, and reclaiming invasive ones. Together we actively chose to be a part of healing wounded landscapes, restoring balance, challenging extractive practices, and transforming ecological harm into acts of resistance and regeneration. This evening and beyond, the plate became a platform, and the cooking, a political act!!

Throughout the year we keep a close eye on any peels or off-cuts from our fruit, vegetables (even bread!) that may otherwise go to waste. And in the garden too, with the ebs and flows of changing weather patterns, there is sometimes an abundance of produce that we're struggling to use fresh before it falls.

Coming up with ways to use them through pickling, fermenting and preserving, is not only a way to research traditional methods, but also a way to create new ones while feeding into a more circular system.

Native and Invasive species: Chef's notes...

Preparations are well under way for tomorrow evenings pop-up with Portugal's regenerative restaurant .sem at austa. Pots are bubbling, vegetables are peeling and preserves are well, preserving (!) as final ferments and touches are being made to the menu after one last forage took place this morning.

Here are a few of the ingredients we'll be rustling up; native and invasive species of Southern Portugal, from pescy blue crabs, to Japonica clams, wild boar and eucalyptus, to beautiful native varieties like coral, saffron milk cap, black trumpet and yellow chantarelle mushrooms from Monchique, to Lira sweet potato from Rogil, peppercorn leaves, persimmon, quince and winter strawberries from Tavira.

We have just two tables left for the evening. DM to book!

This might be our best mushroom dish yet...

Mushroom season is back in full swing and chef has been out foraging after the rains, plucking out kilos of juicy fungi to rustle up on our winter menu. Here, grilled pennybun mushroom, fried chicken of the woods and pickled caesar are served with a spinach mousseline and cured egg yolk.
