Chef Maria worked in some of NYC/Manhattan's leading kitchens. Including Bar Basque, a restaurant focusing on Spain’s Basque Region Cuisine, and Maialino, Danny Mayer's Italian restaurant in the trendy Gramercy Park Hotel. She also worked under James Beard award winner Chef Gabriel Kreuther at the Modern, a renowned 3 star New York Times and Michelin Guide star Alsatian restaurant. Maria attended culinary school at the French Culinary Institute in New York where she received the prestigious Outstanding Service Award. She also returned to the FCI in 2011 to serve as a Chef for independent events. Entrepreneur John Mercedes, a young visionary with a proven track record in creating successful businesses. He holds a degree in Global Business from The University of Phoenix and is the proprietor of Johnny's Cafe, a popular local restaurant in the trendy Miramar area of San Juan, PR. He is also an in demand consultant for new restaurant modules, and certified in the commerce and exporting field. His organic approach to management and customer relations has won him the respect and friendship of many employees and clients alike. Founded in December 2011, UDC, is the pioneer Supper Club in Puerto Rico and is bringing this movement to the island in full force.

And just like that that 19 years. I’ll admit, I’m tired, being a caregiver of a non-verbal person with profound autism is exhausting. What I’m not tired of all the kisses, love and ways that you show affection and curiosity. If you’ve followed me for a while then you know how I feel about my boy and love of my life Jack Grubb. We will continue to fight and advocate for you. Current society and government insanity is threatening the little help we get for Jack outside of our support system, do call your senators, after all at one point we will all be either caregivers or in need of it. Call your senators. Anywho, happy cumpleaños Mr Bear. You are so loved! 🎈

“What RFK Jr. is doing right now will not help our families. Calling autism a disease to be “cured” isn’t progress—it’s erasure. Appointing David Geier, someone tied to dangerous and discredited science, isn’t leadership—it’s sabotage.
And let’s be clear: they are hijacking the autism community to push a harmful agenda that has nothing to do with supporting our kids or families.

This rhetoric doesn’t just spread fear—it reignites long-debunked myths, especially the dangerous and false claim that vaccines cause autism. That lie has already done enough damage.

Now, we’re seeing the consequences.
As of April 2025, the U.S. has reported over 700 measles cases—including two child deaths—and a rise in whooping cough cases, with multiple infant fatalities. These outbreaks are directly tied to declining vaccination rates fueled by misinformation and fear.

What we need is:
• Support, not scapegoating
• Research, not propaganda
• Respect, not erasure
• Acceptance, not fear
• Belonging, not blame

Our kids deserve better.

I learned classic French technique from renowned chefs at the FCI. One of these included my personal favorite chef of all time, our esteemed Dean Jacques Pépin. At FCI, I discovered Brandade, the classic French preparation made with salt cod & potatoes. Here in 🇵🇷, salted cod is called “bacalao” and has been a key ingredient for us for generations, I’m excited to share my version of Brandade thru the for their Cook with Jacques Pépin & Friends video book celebrating the 90/90 campaign. My take honors the classic original version but incorporates local ingredients like yuca & avocado.
