Seler nieczęsto jest pierwszym wyborem, kiedy myśli się o głównym składniku dania. A szkoda, bo odpowiednio potraktowany potrafi zaskoczyć.

U nas gra główną rolę, obok fenkułu i ikry z troci.

Bursztyn zatrzymuje światło.
My chcieliśmy zatrzymać smak.

W niewielkiej formie zamknęliśmy ziemniaka, szczypiorek i dojrzewający ser.

Kacper swoją budował w Szkocji, Francji i Stanach Zjednoczonych.

Dziś jako Junior Sous Chef jest częścią zespołu od pierwszego dnia. Do kuchni wnosi doświadczenie, precyzję i całkiem sporo dobrego humoru.

Fermentujemy, kisimy, marynujemy. Zamykamy najlepsze momenty sezonu, żeby wrócić do nich wtedy, kiedy nabiorą zupełnie nowego znaczenia.

Nie wszystko na talerzu powinno być oczywiste od pierwszego kęsa.

Lubimy, kiedy smak odsłania się powoli. Kiedy coś zaskakuje, coś zostaje na dłużej, a kolejny kęs smakuje już trochę inaczej niż poprzedni.

W tym daniu tę historię budują trzy różne charaktery. Jagnięcina, czarny czosnek i cukinia. Połączenie pełne kontrastów, które odkrywa się z każdym kolejnym kęsem.

We like it when flavour unfolds slowly. When something surprises you, something lingers, and the next bite tastes just a little different from the one before.

Czasem to ostatni gest przed wydaniem talerza. Czasem element, nad którym pracowaliśmy znacznie dłużej, niż mogłoby się wydawać.
