Day 1 was three years ago.

Five tables. Stainless stools that one guest compared to that of a canteen's. Bare walls. Unfinished mezzanine. Not much equipment. Just a small team with big dreams and a healthy dose of impulsive decisions.

We didn't have much, but we had hope.

Three years later, a lot has changed. We've grown, learned, stumbled, celebrated, adapted, and rebuilt more times than we can count. Along the way, we discovered who truly believed in what we were building, who quietly stood by us, and who chose to walk away. Every chapter, even the difficult ones, shaped the restaurant we are today.

They say the third year is one of the biggest milestones for a restaurant. The honeymoon phase is over, and only grit, resilience, and purpose keep you going. Looking back, it was never easy but we're grateful to have made it here.

To everyone who has dined with us, supported us, recommended us, celebrated milestones with us, and kept coming back—thank you.

Here's to everything we've learned, everything we've overcome, and everything that's still ahead.
