Around 20 years ago, my dad would bring home a chocolate cake from time to time. I still remember how different it was from the cakes we usually had from commercial bakeshops.
This wasn't too sweet. It wasn't dry. And it didn't have that oily mouthfeel I thought all cakes were supposed to have. It was just really, really good.
It was rich, soft, perfectly balanced, and straight up simple. The kind of cake that quietly changes your standards without you realizing it.
Looking back, I think that cake was one of the reasons I fell in love with chocolate cake... and eventually, with baking itself.
Years later, every chocolate cake I make carries a little piece of that memory. Not just because I want to recreate the flavor, but because I want others to experience that same feeling. The kind that makes you pause after the first bite and remember it for years.
