Brazo De Fernando

Much like it’s namesake, our grandfather, Fernando, this Brazo is anything but regular. This cake is a chocolate infused soft meringue with custard filling and dusted with cocoa powder at the top. This is the first of our desserts that made it to Inquirer Lifestyle’s Best Desserts Book 2 2015.

Minanok ng Santa Cruz

This dish was created after World War II, when meat-especially chicken-was scarce or too expensive for most households. It mimics the the flavors and texture of chicken stew but uses puso ng saging as the main ingredient. With native aromatics and imagination, it became comfort food for locals in
Santa Cruz, Laguna.
