At DOLOCAB, we are not a fast-food chain. We take pride in serving freshly grilled Chicken Inasal, cooked only after your order is placed to ensure the best quality, flavor, and freshness.

Our usual grilling time is 30–45 minutes, depending on the volume of orders. We truly appreciate your understanding and patience while we prepare your meal with care.

If you are in a hurry or have limited time, we respectfully suggest considering this waiting time before placing your order.

To our valued customers,

What a weekend it has been for Dolocab.

For those who may not know, a well-known food vlogger recently visited our restaurant after being repeatedly recommended and tagged by our loyal customers. We are beyond grateful for the vlogger who took the time to visit us, and for everyone who became curious enough to give our humble inasal restaurant a try.

What followed was something we never expected.

Dolocab is still a small business. We are not a large restaurant with a big kitchen, multiple cooking stations, or a large workforce. We are a growing local brand that has worked hard every single day to serve quality inasal and provide the kind of service that keeps our customers coming back. This coming August, we will only be celebrating our first year in business.

In less than a year, we have learned to manage our operations well. We built systems that worked for our regular customer volume. We trained our team to provide the best service we could. We made sure that every plate that left our kitchen met the standards we set for ourselves.

But this weekend was different.

On Saturday, we only had two staff members on duty. We expected a normal weekend, but instead we were met with a crowd much larger than anything we had ever experienced before. Orders kept coming in, tables filled up quickly, customers continued arriving, and our small kitchen struggled to keep up with the demand.

By Sunday, our complete team was already on duty, hoping to handle the expected rush better. However, the volume continued to grow. We were simultaneously receiving a large number of online orders while accommodating walk-in customers throughout the day. Despite everyone's best efforts, delays became unavoidable.

Our kitchen staff worked tirelessly without slowing down. Our service crew did everything they could to assist customers, answer inquiries, manage expectations, and keep operations moving. We witnessed our team pushing themselves beyond their limits because they genuinely wanted every customer to leave satisfied.

Unfortunately, despite our efforts, we know that many of you waited longer than you should have. We know that some customers left disappointed. We know that some were unable to place orders or even be accommodated at all.

For that, we sincerely and wholeheartedly apologize.

We have spent the past year building a reputation not only for our food but also for our customer service. One of the things we are most proud of is hearing customers describe our staff as accommodating, friendly, hardworking, and attentive. That is why it hurt us deeply to read some of the comments and criticisms directed toward our team this weekend.

At the same time, we understand.

When customers spend their time and money to visit our restaurant, they deserve a positive experience. Long waiting times, unavailable seating, and delayed orders can be frustrating. Your feedback, even when difficult to hear, comes from your actual experience, and we respect that.

What we ask is a little understanding for the people behind the counter and inside the kitchen.

Our staff did not stop working. They did not stop caring. They did not stop trying.

They were simply faced with a situation none of us had anticipated.

This experience reminded us that growth is both a blessing and a responsibility. While we are thankful for the exposure and support, it has also shown us that we need to improve our capacity, strengthen our operations, and prepare ourselves for larger volumes of customers moving forward.

To everyone who patiently waited in line, thank you.

To everyone who stayed despite the delays, thank you.

To everyone who encouraged our staff, showed kindness, and understood our situation, thank you.

To our loyal customers who defended us, recommended us, and continued supporting us throughout the weekend, thank you.

And to those whom we disappointed, we are truly sorry. We hear you, we acknowledge your concerns, and we promise to learn from this experience.

As part of our commitment to improving, Dolocab will be CLOSED today for kitchen maintenance, operational review, and preparation. We will use this time to evaluate what happened, identify areas for improvement, and make the necessary adjustments so we can serve our customers better in the future.

This weekend was challenging, but it also reminded us how far we have come. From a small restaurant with a simple dream to a growing business supported by an incredible community, every milestone has been possible because of you.

We may not be perfect, and we may still be learning, but one thing remains certain: we are committed to improving, growing, and serving every customer with the same passion and dedication that brought us here in the first place.
