Why we don't make boiled icing cakes 😊

Ang dami nagtatanong sakin before if i make boiled icing cakes. Sadly my answer is no.

Sorry po pero I don't like boiled icing cakes... Why? For several reasons...

#1 Hindi sya madali gawin. When i was a beginner i tried this but sadly hindi ko talaga makuha yung right consistency and sayang ang ingredients ko. So sumuko ako 🤣

#2 sayang yung egg yolks. So i actually ended up with a bunch of egg yolks and didnt have a purpose for them. Kung gagawin kong custard tapos wala naman umorder sayang lang ulit yung ibang ingredients na ginamit ko pati gasul 🤣

And lastly but NOT least....

#3 Boiled icing is just TOO SWEET. YES, it is too sweet for me 🤣 to achieve a certain stage of stability there must be a good ratio of sugar to egg whites. And remember, it's only those two ingredients. So the sugar content is around 30-33 % of the volume. To cover an 8x3 inch cake would be around 100 grams of white sugar. As to the icing that I make only has around 56 grams of sugar to coat an 8x3 inch cake. Imagine making a boiled icing cake and then coating it with caramel or Dulce de leche.... Grabe na yung tamis 🥴

I grew up not liking things that are too sweet because my grandpa had diabetes, so it is super important to me that my customers don't get diabetes too 🤣 I even had to adjust my cream cheese frosting several times before coming up with a perfect recipe that tasted great but want super sweet.

Im not trying to bash boiled icing cakes or other backers who make it. It just has a certain target market. So if you're looking for boiled icing cakes may iba din mga cake suppliers who can make some. Sorry to say lang I'm not one of those bakers, and that's okay 😊

Kaya para mga nagsasabi sakin ng "ayoko ng masyadong matamis" Pero ang hanap boiled icing wag nyo ko pinagloloko. sumasakit ngipin ko sainyo 🤣🤣🤣
