GAIA blossomed from a dream to provide you with a more natural approach to eating & preparing food,
a closer relationship with Mother Earth. Aside from herbs and spices, you’re tasting organic raw sugar, unrefined sea salt, naturally-brewed soy sauce and locally-manufactured

vinegar in your food. No MSG or any artificial flavors have been used. We serve organic produce as much as they are available. The only rice available for you here is organic
and unpolished or hand-pound. We don’t use canned or processed foods if we can make them from scratch and if we can get
the raw ingredients from our local farmers. Imported ingredients are included if they are organic and if we can’t find any local source. Our restaurant is also zero-waste. Firstly, we think of ways on how to reduce our wastes. As such, we regret that not all our food are available for take-out, unless you have reusable containers with you. We also don’t use straws. We are glad to inform you that we segregate the wastes we can’t do away with. Our edible food scraps go to our organic pig. Other non-reusable biodegradables go to the compost pit. We reuse & recycle non-biodegradables. Coming here already involves you in healing our people & our planet. In making you happy, which we give our best to do,
we also make Mother Earth happy. CRAFTS SHOP

We sell a variety of products in our shop. We also like to support community-based livelihood and small industries. There’s home-made sugar-free peanut butter, roasted peanuts, ground coffee or whole coffee beans, instant rice tea, and other local food products. Our back-loom woven items are from different areas in the Cordillera region. We make available a few publications on Igorot culture, history and people that are mostly independently published. We also sell ointments and rubs made from ginger, mint, chili and other herbs. Our dishwashing soap for sale is plant-based (made from kamias) and all natural. But we aren’t limited to just these. Here at GAIA, you may also nourish your mind. We have a small but meaningful collection of books and magazines that you may read for free. You may even spend the whole day here and be in the company of our reading materials. This library is a tribute to my late father, who taught me to love books and to enjoy reading. In starting this small collection of books, I want to encourage reading and to celebrate the worlds we find in books. Most of the books here are mine, collected from years of searching shops for books to befriend. Some of the books have been donated by relatives and friends.

Zero-waste travel begins before stepping outside homes—it is when you start packing your bags.

Traveling sustainably begins with choosing reusables: bring your own water bottle, utensils, and bags; opt for solid toiletries such as shampoo bars instead of sachets; and plan sustainable transport options such as bus or trains.

At your destination, support local businesses, eat local and seasonal food, refuse single-use plastics like straws and disposable cups, and always pack out your trash, leaving every place as clean as you go.

Zero-waste travel is about reducing what we consume, reusing what we already have, and making conscious choices in transport, accommodation, and activities, so we can explore the world while treading lightly on it.
