These are what I love most at JSM Chinese Restaurant in Baybay, Roxas City. To truly savor those favorites, it’s all about leaning into the textures and the coastal atmosphere of Baybay.
1. Savor the "Wok Hei" in the Stir-Fry
For the Stir-Fry Squid, look for the "breath of the wok."
Aromatic Finish: Take a moment to catch the scent before diving in. A great stir-fry should have a slightly smoky aroma from the high-heat wok.
The Texture: Good squid should be tender with a slight "snap." Since you're in the seafood capital, the natural sweetness of the squid should shine through the savory seasoning.
