The exact origin of hummus is a subject of debate among various countries in the Middle East, including Lebanon, Syria, Palestine, and Israel. While the core ingredients—chickpeas, sesame, lemon, and garlic—have been consumed in the region for centuries, the first written recipe for a chickpea purée with tahini and lemon juice appears in a 13th-century cookbook from Cairo. However, this is not the first mention of a chickpea dish. Records from the 13th century also mention a cold purée of chickpeas with vinegar and pickled lemons, but without tahini or garlic.
