dear diary, we whisked over 150 cups of matcha last weekend... 🫣

i still can't believe it. a little dream from home turned into a real booth, with real people trying our matcha 🥹

to everyone who found us, visited us, and gave shiro uchi matcha a try, thank you so much 🫶 and to our family and friends, thank you for cheering us on from day one.

to team rolled., we couldn't have done this without you ⭐️ and thank you THE ALIENS CLUB for giving a small brand like us a spot.

this one's special to us as we're finally whisking with our own matcha powder, sourced straight from kagoshima, japan. lots of tasting, testing, and back and forth to get here, and we can't wait for you to try it! 👋🏻

and we're not doing this alone! rolled. will be right beside us with kimbap and other good food, so come hungry too 😋

behind the scenes of finding our next matcha 🍵

we've been quietly testing a few new cultivars, and tasting them straight as usucha, then as lattes with both oat milk and dairy, taking notes on everything from creaminess, bitterness, astringency, to umami and how they hold up with milk.

it's slow work. a lot of tiny cups, a lot of scribbled notes, a lot of "wait, taste this one again."

but this is how we make sure whatever ends up in your cup is something we're actually proud of.
