Two new filter releases have found their place on our shelves.

From the volcanic slopes of Santa Ana, El Salvador comes a Honey Bourbon processed through the honey method. Expect a layered cup of honey sweetness, crisp apple acidity, ripe plum, and a delicate roasted almond finish. A profile that highlights both the cultivar’s elegance and the sweetness retained during processing.

Alongside it is a Pulped Natural from Carmo de Minas, Brazil, a region long celebrated for producing structured and expressive coffees. This lot opens with macadamia and dark chocolate, supported by notes of plum and a gentle orange brightness that brings balance and clarity to the cup.

Every coffee on our menu exists for a reason. The Satori Set brings together four of those expressions, offering a glimpse into the range of experiences we aim to create. Expect a rotating espresso paired with milk, a seasonal pour over, and your choice of a signature beverage: cold brew, Tokyo Drip, or Tokyo Tonic.

It is a quiet invitation to explore the coffees, techniques, and ideas that continue to shape our craft.

Experience exclusive sensory workshop and barista foundation with 4 hours each of session at Beans & Bites - Iligan’s Neighborhood Slow Bar , hosted by Kim Co from Satori.

Led by Kim Co Daluz , the session focuses on refining sensory awareness and palate calibration through structured aroma recognition, flavor mapping and standardized cupping methodology. You will explore the foundations of coffee sensory science while learning to identify and differentiate acidity, sweetness, body, all while developing a shared and precise language for aroma and flavor categories.

Using Le Nez du Cafe and SCA cupping protocols, this workshop builds objective perception, scoring alignment, and professional evaluation skills. Each exercise is intentionally designed to sharpen sensory memory, improve accuracy, and strengthen confidence in assessing coffee quality.

For Barista Foundation that is designed to build a strong, well rounded foundation, covering everything from dialing in espresso with preciion to understanding essential cafe workflows. It offers a structured awareness behind the bar.

For our 16th Bartakeover, we’re heading south to Iligan City, Lanao del Norte this June 27.

What started as a conversation about bringing Satori to a different corner of the country became something much more meaningful through the people who made it happen. Long before plans were finalized, the owners of Beans & Bites - Iligan’s Neighborhood Slow Bar brough the idea to us with genuine enthusiasm, generosity, and a clear intention to create something valuable for their community. From the first messages to the countless discussions that followed, their kindness and commitment made this collaboration possible.

Coffee has always found its way through communities. Each city carries its own rhythm, culture, and perspective on hospitality, and Iligan is no different. As its coffee scene continues to grow, we are grateful for the opportunity to be part of the conversations, exchanges, and learning that help move it forward.

Alongside the Bartakeover, we’ll also be hosting a workshop designed to share knowledge, encourage dialogue, and create space for both professionals and enthusiasts to explore coffee more deeply. Together, these gatherings are about more than serving drinks. They are about building connections, exchanging ideas, and strengthening the communities that continue to shape specialty coffee across the country.

Happening this Saturday, June 6, Satori opens its bar to a takeover by from Cebu, led by Dan Hong ( ) , founder of Peak and Pi and Peak Coffee Roasters.

This collaboration brings together two communities shaped by a shared direction. Peak Coffee Roasters and Peak and Pi have always moved with a clear intent to elevate coffee through clarity, consistency, and a deep respect for origin. Their vision aligns with building spaces where coffee is not only served but understood, where every cup becomes a reflection of process, people, and place.

At Satori, this guest shift becomes more than a feature service. It is a dialogue between philosophies. A meeting point where Cebu and Manila connect through craft, discipline, and curiosity.

Water is often called coffee’s most overlooked ingredient. Yet every mineral, every shift in pH, and every change in conductivity shapes how a coffee extracts, tastes, and ultimately tells its story.

This Tuesday, June 16, we’re excited to welcome Estella Zuleta Carmona ( ), an AST Trainer, Q Grader, and Q Instructor, to Satori for an immersive workshop on Water for Coffee Flavor Design.

As Head of Coffee at .ae in Dubai and an accomplished sensory judge, Estella brings years of experience in helping coffee professionals understand one of the most influential variables in brewing. Together, we’ll explore how mineral composition, alkalinity, pH, temperature, and conductivity interact with coffee, and how intentional water design can unlock greater clarity, balance, sweetness, and origin expression in the cup.

Through guided discussions and hands on exercises, participants will learn the fundamentals of water chemistry, understand key concepts such as ppm and conductivity, and develop practical approaches to building water profiles for different coffees and brewing goals.

For anyone fascinated by what shapes flavor in the cup, this workshop offers a deeper exploration of one of coffee’s most important variables. Because sometimes, understanding coffee begins with understanding water.

We will also be serving the highly sought after Colombia Gesha from Nano Lot 2308, known for its layered fruit complexity, refined acidity, and delicate floral aromatics.

Completing the experience is the rare Colombia Sudan Rume Signature Lot T895 from , a remarkable coffee recognized for its intensely expressive profile, exotic florals, spice driven sweetness, and deeply complex cup structure.

We’re throwing out the rulebook and inviting brewers to build, adapt, and compete with something entirely their own. For this challenge, competitors must create their own dripper using only the provided materials. No added equipment, no extra modifications, just creativity, control, and understanding of extraction under pressure.

This is not only about brewing great coffee. It is about problem solving, precision, and how far technique can go when limitations are part of the experience.
