In Spain, an aperitivo is more than the first course. It is an invitation to slow down, enjoy a glass of wine, and share a few small plates before the meal begins.

Few dishes belong to that tradition more than Gambas al Ajillo. Shrimp lightly charred by the fire of the asador, then finished with plenty of garlic and extra virgin olive oil.
