Locally sourced suahe with a fontina cheese filling, topped with pickled 𝘭𝘢𝘣𝘢𝘯𝘰𝘴 and house-made 𝘴𝘪𝘯𝘢𝘮𝘢𝘬 mayonnaise — an Ilonggo-forward approach on a Hong Kong shrimp toast classic.⁣

As we transition towards an Ilonggo-forward cuisine, our focus goes beyond the dishes we know and love. Through thoughtful techniques and creativity, we aim to deepen our knowledge and appreciation for our local produce, flavors, farmers, and artisans, that help shape who we are today.

A recap on our latest degustation! 🌿⁣

Two chefs brought two kitchens together for a lunch and dinner service that was equal parts Iloilo and Bacolod, but singularly aligned with one advocacy: 𝘵𝘰 𝘶𝘵𝘪𝘭𝘪𝘻𝘦 𝘐𝘭𝘰𝘯𝘨𝘨𝘰 𝘱𝘳𝘰𝘥𝘶𝘤𝘦 𝘮𝘰𝘳𝘦 𝘪𝘯𝘵𝘦𝘯𝘵𝘪𝘰𝘯𝘢𝘭𝘭𝘺 .⁣

At Mestizo, we have described this type of cooking as “Ilonggo-Forward” whereby dishes are rooted in heritage, guided by locality and driven by technique, curiosity and a shared vision for exploration and growth. Every dish told our diners exactly where it came from and why that mattered. The simple Ilonggo dishes we all know and love reimagined by Chef Don and Chef Miles who have worked tirelessly to bring it to the table.⁣
