One of our August Menu gems. Sagay Abalone, sustainably harvested by the local fisherfolk of Sagay City on the Northern Coastal Area of the Negros Island.

Braised with local b**r, ginger and lemongrass, compressed with a light adobo marinade, served on top of seasoned organic red and black rice from FreshStart Organic Farm, with a hot broth made from the grilled trimmings of the abalone.
