Switched this week’s croissant batch to 100% bread flour RFM FLOUR, as advised by Chef Randy.

And honestly… no regrets.

Stronger dough. Cleaner lamination. No stickiness. No excess dusting.
The layers came out defined, the croissants fuller, the structure just right.

What surprised me most?
Same performance as the premium flour we used before. but more accessible, more consistent, and easier to source here in Bohol through ANTMART. Delivered straight to the shop. Fresh, reliable, no stress.

At the end of the day, it’s all about the result, and this one speaks for itself.

I think it’s official.

Took the advice of Chef Randi Alvarez from RFM, and the results speak for themselves.

Better lamination. Stronger dough. Cleaner layers.

And at ₱1,000 per sack, the performance is hard to ignore.

We’re proud to say… mornings at Biyan’s just got better.

All breads and pastries…
from croissants, pain au chocolat, kouign-amann, cinnamon rolls,
to baguette, ciabatta, and sourdough…
are now freshly baked and ready by 7AM.

And if you’re chasing that just-out-of-the-oven moment…
you might even catch them as early as 6AM.
