Not sure how to make your hotpot sauce? Try this!
1. Add the 3 aromatics: Garlic, spring onions, and wansoy, at least a spoon or two each
2. Drizzle a spoonful of the peanut sauce
3. add half a spoon of the oyster sauce (adding too much makes it salty)
4. sprinkle a bit of chicken powder
5. (If you like spicy) - add some chili oil to your mix, adjust depending on spice tolerance
6. pour in some soy sauce (not too much if you dont want it salty)
7. Add some black vinegar, about half of the soy sauce you put in
8. Top it all off with Sesame oil, this part you can be more generous with
Although those 8 steps work fine, if you really want that Sichuan taste, you can also add a small amount of Sichuan Peppercorn Oil. Although this DOES NOT make it spicy, it does give that numbing sensation typical of the "Mala" taste that Sichuan food have.
The hotpot sauce is very important for your hotpot experience. After you have cooked your ingredients in the broth, the final flavor is completed with the sauce you create.
This is why every hotpot experience can be different simply by changing up your sauce!
