Roti Gluay aka "Banana Pancake"
During our first five years in Sugbo Mercado and other food markets, the perpetual question was, "Where is the pancake?"
For those few years, Banana Pancake Trail ironically didn't have pancake on the menu. We focused on selling Pad Thai, Banh Mi, and Satay.
But when we opened our brick and mortar in 2020, we finally had it. Here are some inspirations from our past travels:
1. Our first try in Cambodia. Unlike in Thailand and other countries, they serve it rolled, almost reminiscent of our very own Turon. Very convenient to hold in one hand while strolling in Pub Street.
2. Bangkok and it's iconic style, cut up into squares. This was a random street cart on a random morning in Silom.
3. In Laos, they serve it flat and cut into squares, similar to thailand. But they do it wider. Like bigger-than-your-face wide. And they also have savory options. We tried a usual Banana Nutella and paired it with a Ham and Cheese Roti.
4. In our most recent trip to Siem Reap, we had the chance to try the 'turon-style' again. We should probably consider doing this in Cebu. 🙂
