Today, as we celebrate Independence Day, here’s a small food story that feels very Filipino.

Crispy Pata was said to be discovered when Rod Ongpauco of Barrio Fiesta kept feeding his friends after school. His mother scolded him for using the restaurant’s regular food, so he looked around the kitchen and found pork knuckles that were not being used.

Instead of throwing them away, he cooked them, deep-fried them, and served them to his friends.

That overlooked cut became one of the most iconic Filipino dishes today.

That is Filipino creativity.

We know how to turn simple things into something worth celebrating. 🇵🇭💚
