The untold story of the Almond Cream Tart weaves through the history of The Dangerous Kitchen, where numerous chefs, bakers, and pastry connoisseurs have left their indelible mark.

A few years ago, we were fortunate to have an amazing pastry chef with us—Antoine Préfol from Paris, France.

Since then, he has opened his own bakery. With a culinary heritage ingrained in his veins (his father a chocolatier), Antoine is an absolute legend and inspiration to us.

Antoine introduced a plethora of French pastries, and among them, the sweet Almond Tart took a special place. The almond cream, a divine blend of butter, almonds, and eggs, is meticulously crafted from scratch. It has become a regular feature in our kitchen, often featuring local produce from Golden Bay or other Grade A fruits. These fruits, after a touch of poaching magic, find their perfect spot on the tart.

We’re stoked to have had Antoine in our kitchen and for introducing us to his world of French pastrie!!
