Rabbit Raviolo, brown butter, crispy sage & pickled apple.

In the AOSTA kitchen we let nothing go to waste, our pasta dough is made using the juice of our pumpkin skins and trimmings, it’s then carefully wrapped around the rabbit ragu.

We use only wild rabbits sourced from Mount Tapuae-o-Uenuku, located in the northeast of the South Island.

Almost always Deer offal is removed on the mountain and forgotten, this dish celebrates the bits left behind.
