Bluenose Shirako Hoba Miso Yaki

Fresh New Zealand Bluenose Shirako, gently grilled over fragrant Japanese hoba leaf with our house-made natto miso.

As the miso slowly caramelises, the rich and creamy shirako melts into the smoky aroma of the magnolia leaf, creating one of Japan’s most treasured seasonal delicacies.

A dish rarely found outside Japan, prepared in the spirit of traditional kappo cuisine.

King Crab Kani Miso Risotto
King Crab, Crab Miso, Cheese & Ginkgo Nuts

Rich crab miso slowly melts into the risotto,
finished with melted cheese and gently heated over charcoal at the table.
