Beginnings are an exciting and sometimes scary time, especially when you have no idea what you are doing!
I was naive, but I had the passion and inspiration to bring Cold drip coffee to the World, so with only a few thousand dollars I decided to open New Zealands only dedicated brew bar in Wellington.
I found a cheap, tiny place upstairs in a arcade in the Wellington business area. Then I started making the tables and benches out of recycled pallets in our garage.
I hated the floor tiles so I started chipping them off with a hand chisel, 2 days later and 1 square meter later I sucked it up and hired an electric chisel, still, it took me days of hard work but I finally finished.
I remember the first day of opening so clearly,
such a feeling of satisfaction and excitment, it didn't matter that I only had a few customers, I was doing it!
Looking back I almost cringe at what I was doing, but what I acheived with such a tiny budget (most cafe's coffee machines would be 5 times that) was pretty amazing really, pure inspiration was my driving force.
10 years on I still have that drive and inspiration and I've learnt so much and met many amazing people, both customers and business people.
I want to take Cold brew to a new level, selling it not just as a coffee drink but as a mocktail -
cocktail mixer. I'd like to see people experimenting making amazing new drinks right in their homes.
