A new team member’s Le plonc favourites

We recently asked one of our newest team members a simple question:

“What’s your favourite dish at Le plonc?”

Her answer? Beef brisket🥩

She already loves beef, but what surprised her was just how incredibly tender it is. Rich, deep, and full of flavour, it quickly became her favourite.

But there are still some dishes she hasn't tried yet—and she's especially curious about them.

Chicken & Prawn Soufflé 🦐
She has no idea what to expect from its flavour or texture, which makes it even more exciting. She thinks it might be a completely new discovery.

Swordfish Mousseline 🐟
She works with this dish in the kitchen, and handling such a delicate and soft preparation always requires extra care and concentration. After seeing how delicate it is during preparation, she can't wait to finally taste it herself.

A Little Cup, A Lot of Care

Our chicken soup is slowly simmering for 4 hours, infused with seasonal herbs from our garden.

The secret touches? Juniper berries, star anise and cloves — just enough to add depth and warmth without overpowering the chicken.

We serve it in a tiny cup… small enough to finish in just one sip.

But even this little cup of soup gets the same care and attention as everything else we make at Le plônc. 🤍

Every dish has a story long before it reaches the table.
Our Chicken & Prawn Soufflé is one of the dishes that truly reflects the care we put into our cooking.

Fresh prawns and chicken are roughly chopped by hand, then mixed with finely diced apple, leek, and ginger.

The egg whipped into a meringue with herbs, then baked into delicate soufflé sheets. The prawn mixture is layered between these sheets before being slowly cooked until perfectly tender.

Finally, the dish is finished with our house-made vincotto chilli sauce.

It's a dish that takes time, patience, and many careful steps—but we believe great food is worth the effort.

Nothing goes to waste in our kitchen🍋

We recently harvested lemons from our garden. The beautiful slices are now slowly drying, while the remaining ends have been packed with salt to begin a much longer journey.

At Le plonc, we preserve our lemons using a traditional method and leave them to ferment for at least six months—often much longer. Time transforms them into something completely different: mellow, deeply savoury, and full of flavour.

Our house-made Chilli Lemon, served alongside some of our dishes, is made from these long-fermented salted lemons, blended with chilli to create a condiment that's bright, complex, and uniquely our own.

If you have a lemon tree at home, now is the perfect time to preserve your harvest.

At Le plonc, we use 50% salt for long-term ageing, allowing our preserved lemons to develop beautifully over many years.

For home use, 20% salt by the weight of the lemons is a more common method and still produces delicious, mellow preserved lemons after a few months of fermentation.

Every ingredient deserves to be appreciated, and sometimes a little patience creates something truly special. 🍋

There's something incredibly satisfying about using what nature gives us 🍋

We recently picked fresh lemons from our garden and carefully sliced and dried them by hand.

It takes a little extra time, but we believe it's these small touches that make food and drinks feel just that little bit more special.

You'll be seeing our homemade dried lemons appear in drinks and seasonal creations at Le plonc.
