Toru Restaurant - EIT Tairawhiti Welcome to EIT Tairāwhiti Training Restaurant - Toru.

The School of Hospitality staff and students look forward to welcoming you to Toru Restaurant, Brew Bar and the Pop-Up Café at the RSU (Rural Studies Unit), Stout Street, Gisborne. We offer productions from all three of our Hospitality Programmes – Cookery, Food and Beverage Service and Café Service.

PLANT-BASED COOKING

This comprehensive Level 3 qualification will teach you how to create balanced and exciting plant-based meals using fruits, vegetables, roots, herbs, nuts, whole grains, stems, seeds and natural oils.

You will cover the production of pastries and breads, basic pickling and fermentation techniques and the use of a variety of methods of cookery. It will teach the specific use of different types of seaweeds, grains, leaves and plant- based proteins as well as nut milks.

This course focuses on satisfying, delicious and nutritious cuisines from across the world, culminating in the production of a plant based degustation dinner at the EIT Restaurant. With increasing demand, there are lifestyle choices and business opportunities within hospitality to grow plant-based menu offers.
