Ever wondered what the difference is between our sourdough and ciabatta? We've had so many amazing customers ask, so here's a little behind-the-scenes look!
Meet our sourdough starter, affectionately known as "Charlotte (Bug)."🥖❤️ Since our baker, Kate joined the team, Charlotte the sourdough bug has been lovingly looked after and
has "travelled" with Kate to many parts of the world before making the journey back to Dunedin. Now, Charlotte is hard at work creating the delicious sourdough you enjoy!
🥖 Sourdough
• Made with a natural sourdough starter (wild yeast and beneficial bacteria) instead of commercial yeast.
• Slowly fermented, creating its signature tangy, complex flavour.
• Has a chewy crust with a moist, slightly chewy centre.
• The long fermentation may support gut health by producing compounds that help feed the beneficial bacteria already living in your gut.
🥖 Ciabatta
• Made using commercial yeast.
• A high-hydration dough gives it its unique texture.
• Has a thin, crisp crust with a light, airy centre full of those beautiful large holes.
• Perfect for Ironic menu.
