Mt Atkinson Coffee

Mt Atkinson Coffee West Aucklands Premium Coffee Roaster and Coffee shop. ack in 2007, Jacob Parsons began Mt Atkinson Coffee with a big dream and legacy to fulfil.

After losing his friend Andy, who had designed and built the initial coffee cart, Jacob had a vision to serve the best coffee in the world. So, he hit the West Auckland streets in the now iconic coffee cart.

2010 arrived and Jacob took a trip that would change his life. He travelled to a Gulu, a little town in Nothern Uganda, East Africa, to help build houses for war affected children, but while

he was there he spent time exploring the coffee plantations. He met with lots of people growing great coffee, and heard stories of local coffee farmers who lacked the infrastructure to get a fair price for their product. Jacob came back to New Zealand fired up with the dream to help these Ugandan coffee farmers through a direct trade partnership. So, later that year, he launched Mt Atkinson Coffee Roasters with the aim of providing the best coffee to local west Auckland cafes and to his own cart, while paying the coffee farmers a fair price for their beans.

“In everything we do, we transform lives”

Fast forward to today and Mt Atkinson is a coffee roaster that roasts beans on a daily basis to create what customers call “the best coffee in the world”. We are now importing container loads of coffee from Uganda. All of this coffee directly contributes to community transformational initiatives in the Kanungu region of West Uganda. The dream is that a new story would be written about the Kanungu region. That they would thrive as a result of our coffee purchasing. The Mt Atkinson crew is headed by Jacob, Emily and the team, but it does not stop there. The crew also includes the coffee farmers in Uganda, the New Zealand cafes that serve Mt Atkinson coffee to their patrons, the customers who visit the coffee cart for a chat and a delicious coffee hit, those that embrace the coffee cart hire service at their events, and the people that buy via the online store. And you could be part of the crew too!

“We love that serving coffee provides a space for a great connection to happen. Genuine connection is what the world needs. For us at Mt Atkinson, we are about connecting on every level, with our social media followers, with the people who buy and serve our coffee, and with the communities and people who grow and process the magic bean.”

Winter mornings with Tom’s Coffee…

You can’t beat it.

04/06/2026

Here’s three reasons why people are switching to Tom’s Coffee:

1. It is so tasty! It is a balanced, daily brew crafted for everyone. Clean, fruit-forward, and easy to return to each morning.

2. Roasted fresh by a local, family owned roastery, and delivered straight to your door.

3. Tom’s Coffee is changing lives in Uganda. We connect directly with Tom and his growers; no middlemen, no exploitation. We pay above market rate and provide interest-free funds between harvests. We build together.

Yesterday left this world 🖤

Graham was the man who taught Jacob how to roast coffee. An old-school coffee legend, he had an incredible gift for all things coffee and could work wonders with the mechanics of an espresso machine.

Raised out West Auckland and later making his home in Tutukaka, Graham spent his life doing what he loved: roasting coffee, surfing, listening to music, getting in the garden and building lasting friendships. We’ve been lucky to call him a friend for nearly 20 years.

The loss is deeply felt by everyone who knew him, especially his amazing partner, Lauren. Even though he shared his latest diagnosis with us seven weeks ago, it still feels far too soon to say goodbye.

We honour you, Graham a true salt-of-the-earth bloke with a passion for coffee, the ocean, and people. He loved surfing and has left his boards to our kids 🥹, a gift that will always remind us of him. Was so nice to have a last coffee with you today 🖤☕️

Rest easy, mate. Thank you for everything. 🖤🌊🕊️

Our most anticipated release of the year is underway 👀

We got our hands on a fresh set of Thomson Whisky barrels, still soaked through to the grain, packed them full of green coffee beans, sealed them up, and set them rolling.

Literally. We roll them by hand regularly, to make sure every single bean gets up close and personal with the whisky soaked deep into the wood.

Now we wait. And trust the process.

In a few months, what comes out of those barrels will be one of the only whisky barrel aged coffees in New Zealand. And it sells out every single year.

We’ve been getting a lot of messages about this one 👀

“How does it taste like peach?”

“Why is it so different?”

Peachy Queen is an experimental co-ferment; fresh peaches are introduced during fermentation in a sealed environment.

This builds deeper, more expressive flavour and brings through that juicy peach flavour.

Not subtle… and that’s why people love it.

We’ve had customers saying:
- “Crazy how much this tastes like peach”
- “Perfect intro to specialty coffee”
- “A new direction for Mt Atkinson”

You’ll taste: Golden peach candy, tropical sweetness, soft coconut finish.

Limited release, don’t miss out.

I’m sure by now you’ve heard of the Mont Blanc, it’s been on everyone’s mind and it’s the talk of the town.

For those who haven’t had the chance to try one (and for those already hooked), this one’s for you.

You can make it at home, and it’s easier than you think. All you need is a few simple ingredients, a little whisking, and you’re there.

You’ll Need:
 •    Double shot of espresso (or 250ml of black coffee)
 •    Cold water & ice
 •    80g cream
 •    5g vanilla
 •    Orange
 •    Nutmeg

How To Make It:
1. Start with your glass. Fill it about 3/4 with ice and cold water.
2. Pour your double shot of espresso over the top (we find our Piha blend works best for the Mont Blanc).
3. In a separate container, combine your cream and vanilla. Whisk until it thickens: smooth, but still pourable.
4. Gently pour the cream over your coffee until the glass is full.
5. Finish with a light grating of fresh orange zest and a touch of nutmeg on top.

The Result:
A bright, creamy, layered, instagram worthy, cup of goodness.

P.S. We find our Piha blend works best for the Mont Blanc.

Give it a go this week.

A special update from Tom and Annet, our direct trade partners in Mount Elgon, Uganda 💛

They’ve arrived home safely to a joyful reunion with family and community. One highlight was Tom reconnecting with his 102-year-old mother, Beresi, who is still actively growing coffee, an incredible reminder of how deeply coffee is part of their lives.

Their boys loved the gifts from Aotearoa. The whole community gathered to hear about their journey. Seeing where their coffee ends up has inspired Tom to push for even higher quality and improved processing this coming season.

Right now, the hills are covered in beautiful white coffee blossoms, with harvest expected to begin in July. Tom is already working on new ideas, including building more drying beds to support quality and consistency.

Tom shared this message:
“Thank you to everyone who welcomed us, and to everyone who drinks our coffee. Your support truly changes lives in our community.”

We’re so grateful to everyone here in Aotearoa who connected with Tom and Annet. Your support means real impact.

Ngā mihi nui

Thank you to for helping us create this special moment 🫶

When we first met Tom in 2024, we took a Fuji Instax camera to capture our trip — it was only fitting for us to do the same for the when they came to NZ.

Ton & Annet took photos with all the people who enjoy their coffee, from our regulars to coffee partners.

They have now shared all these with their growers & families 😌
