Agnello. The lamb pizza nobody else in Auckland makes.
Slow-cooked lamb on a white base, pecorino, no tomato, ninety seconds in the wood fire and rosemary oil over the top. The one to order first.

We heard it's strawberry season. So the calzone got strawberries, then it got Nutella, and now it comes out like this 🍓

Tartufo. Truffle under, porcini over. Half measures are not a thing here.

Truffle bechamel on the base, fior di latte, pecorino, mushrooms, ninety seconds in the fire, and then porcini salsa over the top once it's out, because the first layer was only the warm-up.

Tear it open first, then dip. No fork, no knife, no shame.

Everything in the cabinet is baked that morning at our bakery in St Heliers and is at Posto in Howick from 7:30. And if you spotted a couple of things you've never seen in the cabinet before: that's the summer selection, having a little preview. Most of it lands in the cabinet this weekend.

A note from the oven.

Michael, our pizza chef, had an accident at work this week and is in hospital. He's recovering, and we can't wait to have him back at the oven, but he'll be away for a little while.

In the meantime, I'll be making the pizzas myself, with a hand from a friend of the house. Pizza is in our blood, Michael and I both grew up in Italy, so the fire stays on and the standard stays where it is. Things might not be quite as usual for a bit: the menu may be a touch shorter on some nights, and it might take us a minute longer. Bear with us.

If you're in this week, come and say hi. And if you have a moment, send Michael a good thought. He'll read every one.
