Favorite Coffee Place in Falstaff Nordics Coffee Guide Nordics 2026.

Roasting beans since 2012, this third-wave café helped launch specialty coffee in Trondheim.
Founder Tony Jacobsen started in a six-square-metre space behind a hair salon; now he supplies several fine-dining restaurants in the region.

Central to Trondheim’s coffee culture since 2012, this bustling café and respected roastery has become a favorite among locals and visitors alike. Founded by head barista and roaster Tony Jacobsen, who remains in place behind the bar, the cafe is known for its approachable yet refined brews, from precise espresso to balanced filter.

One thing about espresso: there are a few tools you need to make a good one.

A good grinder. Filter, Aeropress, even Bialetti - none of these need much precision. On a scale of 1–10, a normal grinder operates somewhere around 0.2–10. An espresso grinder operates in a tiny window, 0.8–1.2. That's what makes it so sensitive, and why it has to be fine and consistent.
A clean machine.
A clean portafilter.
The right dose. Somewhere between 16–20 grams. Light roast: 18–20g. Medium/dark roast: 16–18g.
Time. Between 18–34 seconds. Sweet spot is 23–28 seconds.
Good beans - maybe the most important of all. It's what makes the rest of the work worth it.

All batches get inspected manually. When a roast is done, we check it by sight and pull samples straight from the cooling tray - some go into the bag, some go into the cup, so we can compare it with what came before and what's coming next.

We could automate parts of this. We choose not to. Doing it by hand keeps us connected to the product, and it puts real ownership behind what is, at the end of the day, a commodity.

Tusen takk for matfestivalen 2026. Det ble en fuktig affære i år, men det gikk utrolig mye kaffe. Vi ble dessverre utsolgt for all Kenya, Rwanda, El Salvador og Guatemala. Som var helt vilt egentlig. Vi takker for i år.

The Alan Parsons Project- Tales of mystery and imagination, Edgar Alan Poe. Bought this today, discovered it for a couple of years ago.

It his album for me is a prog soft rock in the same landscape as queen and other more conceptional progressive bands at the time. It’s a great spin best to be enjoyed with a listening ear. So it’s not a very social album. But it’s a theatre of a record. It goes through a lot of ethos and on the side you get a slingshot of good old rock roll vibes.

To attempt to describe the coffee is much like exploring the likes and dislikes within the cup of coffee. You have to stay present with what is actually in your cup, as if life is unfolding right in front of you.
It doesnt matter if you like it or not, dont judge it. Just observe it and see where it takes you.

The moment your attention drifts elsewhere but the coffee, the magic disappears.
So remain present and curious about what is in your cup, because the what is present truly matter.
