Piles de betteraves et de chèvre rustiques avec vinaigrette au thym de noix

Ingrédients :

3 betteraves rouges moyennes

3 betteraves dorées moyennes

6 oz de fromage de chèvre crémeux

1/4 de tasse de noix grillées, finement hachées

1 cuillère à soupe de feuilles de thym fraîches

Sel de mer et poivre noir craquelé, au goût

Pour la vinaigrette au thym de noix :

1 cuillère à soupe de moutarde de Dijon

2 cuillères à soupe de vinaigre rouge

1/4 de tasse d'huile de noix (ou d'huile d'olive)

1 cuillère à soupe de sirop d'érable ou de miel

1 cuillère à soupe d'échalote finement hachée

1 cuillère à soupe de feuilles de thym fraîches

Sel poivre, au goût

Itinéraires :

Préchauffer le four à 400°F (200°C). Frottez et coupez les betteraves, puis enveloppez chaque couleur séparément dans du papier alu. Rôti pendant 45-60 minutes, jusqu'à ce que la fourchette soit tendresse. Refroidir légèrement, éplucher et découper en balles de 1/4 de pouce.

Dans un petit bol, fouettez ensemble moutarde, vinaigre, sirop d'érable, échalote, thym et huile jusqu'à émulsification. Assaisonner avec du sel et du poivre au goût.

Sur un plateau de service, couche alternant des tranches de betteraves rouges et dorées avec de généreuses cuillères de fromage de chèvre entre les couches. Empiler 2-3 tranches de haut.

Bruine de vinaigrette au thym de noix et dessus de noix grillées hachées et extra de thym.

Finir avec du poivre noir fissuré et un léger saupoudrage de sel marin. Servir immédiatement ou détendre brièvement avant de servir.

2 portions egg noodles, cooked & drained

1 cup bok choy, chopped

½ onion, chopped

1 small carrot, julienned

2 garlic cloves, minced

1 tbsp vegetable oil

Sauce Mix:

2 tbsp soy sauce

1 tbsp oyster sauce

1 tsp hoisin sauce

1 tsp brown sugar

¼ cup water

1 tsp cornstarch (to thicken)

1. Marinate the Beef:
Toss beef with soy sauce, sesame oil, and cornstarch. Let sit 10 mins.

2. Prep Sauce:

1 cup olive salad, store-bought or homemade (see notes for a quick recipe)
¼ cup sliced pepperoncini peppers (optional), for a tangy kick
Instructions
Step 1: Prepare the Bread
Slice the Italian bread loaf in half horizontally to create a top and bottom half.
Step 2: Make the Herb Oil
In a small bowl, whisk together olive oil, oregano, and basil.
Brush the mixture generously onto both cut sides of the bread.
Step 3: Layer the Ingredients
On the bottom half of the bread, layer the following in order:
Turkey ham
Beef salami
Mortadella
Provolone cheese

Instructions
