Meet the newest star of the kitchen, Jailson, coming all the way from Portugal 🤌🏽

«I’ve been making sushi for 15 years, it’s my passion. I’ve always lived near the sea and felt so comfortable handling sea food. It’s my black belt at home lol.

There’s something about working with fresh food, especially Otoro which is the premium cut of meat from the bluefin tuna belly.

I’ve always been fascinated by the Japanese culture and their art around handling food. The fresher the better!»
