Fregula, also called fregola or freula is a kind of pasta produced in Sardinia. The name derives from the Latin verb "sneezing", that is to say "smudging". Fregula is a pasta of semolina produced for "rolling" of wet semolina inside a large barrel of roasted ham in the oven where it takes its typical brunast coloring. We serve it with green asparagus, wild garlic, roasted kalamata olives, ⁠

Dear guest,⁠

With tears in our eyes and pain in our heart we have come to the realization that it’s time to start looking for new owners for our beloved restaurant, WAKU WAKU. New owners, with new energy, new recourses, and new creativity to take it all to the next level and make this place flourish, even more than it already does. ❤️⁠

The past four WAKU years have been amazing. Crazy. Insane sometimes. It was a huge adventure. A test. A live experiment which originated in our vision of what a new world can look like. We learned, we grew, we fell and got up and along the way, we changed. We still see the beauty of giving everything for something you believe in. At the same time, we recognize an urgent personal need to shift our main energy towards each other and our son to become more balanced and happier.⁠

To be honest, this is a rough one. Because WAKU is our family too. This place, and this tribe we gathered along the way became deeply important for us. But sometimes we have to make complicated, difficult decisions in life. This is one of them.⁠

But for now, we are still here! Making magic. Expanding the boundaries of the plant-based kitchen once more and serving the finest most profound dishes out there. ⁠
