Adesso che ci avviamo verso il recupero delle nostre vite normali, sebbene con restrizione e con la responsabilità di prestare massima attenzione alle norme di sicurezza e alle regole imposte dal governo, voglio postare nuovamente il mio documentario per riportare alla mente di ognuno di noi di premiare l'Italia, adesso come in futuro, per la scelta delle nostre vacanze e della nostra alimentazione. L'Italia ha sofferto molto in questa situazione drammatica che ha visto tante vittime, alle quali va e deve sempre andare il nostro ricordo perché erano mamme, papà, nonni di qualcuno uguale a noi, ma soprattutto perché erano esseri umani.
Ognuno di noi sa o dovrebbe sapere che restare in casa è ed è stato, l'unico contributo che potevamo dare ad un sistema sanitario sofferente. Era nostra responsabilità salvaguardare la comunità limitando la nostra libertà personale. Spero che non dimenticheremo e spero che, dopo tutto questo, saremo persone migliori, che ci renderemo conto che la vita è davvero la cosa più preziosa che abbiamo e che smetteremo di vivere come se non dovessimo morire mai. Il prossimo gesto di responsabilità al quale siamo chiamati è quello di scegliere per le aziende del territorio, comprare Made in Italy, spendere nei negozi dei nostri commercianti del paese, fare le nostre ferie in Italia , per aiutare loro che, responsabilmente, hanno fatto delle rinunce per salvaguardare la nostra comunità.
Poi frase molto cliché, vogliamoci bene. Abbiamo toccato con mano che il litigio, l'astio e le discordie sono sentimenti inutili in circostanze come queste. Non sentiamoci in futuro né superiori né invincibili.
Adesso riabbracciamo, con prudenza, le nostre famiglie e gioiamo di questo primo passo, ma vi prego, non paragonate lo "standby" delle nostra libertà alla guerra perché così daremo solo prova che gli esseri umani sono progettati per dimenticare e non per imparare dalla memoria.
Adesso come sempre, viva l'Italia!

You will have every comfort you wish to have when you are on holiday in a very clean and good looking sort of mansion. I was there for my 21st birthday, and the owners bought for me a birthday cake as a present.

FLAN DI PARMIGIANO REGGIANO, PERE CARAMELLATE E ACETO BALSAMICO TRADIZIONALE DI MODENA
Ingredients:
300g Grated Parmigiano Reggiano
100g Fresh cream
3 Eggs
2 Pears
40g Sugar
1 Orange
Procedure:

Blend together the Parmesan Cheese the fresh cream and the eggs till you have a smooth creamy product. Add some nutmeg. Salt should not be necessary and pepper only if you prefer.
Put it in a plum cake mold and bake it in a preheated oven on 170 degrees for 45 minutes. You have to put the plum cake mold in a deeper oven tray in order to cook it in bain marie and covered with aluminium.
While it cooks prepare your pears. Peel the pears, cut it in pieces and put it in a pan with the juice of an orange. When the pears are a bit softer take them out and put the sugar in the liquid the pears have made with the orange juice while cooking. Turn on the fire and start making your caramel. When it starts to be brown take it off the stove and pour it on the pears.
When the Flan is ready let it rest for a few minutes and serve it with the pears and some extra old balsamic vinegar of Modena.

PLUM CAKE ALLO YOGURT🍰
Ingredients:
200g Flour
180g Sugar
250g yogurt natural
50g potatoe starch
3 eggs
100g extra virgin olive oil
1/3 glass of milk
16g baking powder
Procedure :
Whip the eggs with the sugar till they are airy and light in color. Then turn off the mixing machine and add the yogurt while softly stirring (you don't want to lose the airy factor, so stir gently). Now add the olive oil and the milk. In a separate bowl put flour, potatoe starch and baking powder. Sift them together and add them in 3 times to the liquid part stirring gently. The texture should be soft, but of course not liquid.
Put it in a plumcake mold and bake it in a preheated oven on 180 degrees for 50 minutes.

PIZZA IN TEGLIA
Ingredients:
750g Flour 00

500g Water

25g Sea Salt

12g Fresh yeast

250g Pomodori Pelati

200g Mozzarella

Fresh Basilicum

Extra Virgin Olive Oil q.b.
Other optional ingredients that you like
Procedure:
Melt in the water your sea salt and the fresh yeast. Add the first half of the flour and let it absorb by the water while kneading ( you can do it by hand or with a mixing machine) , afterwards add the rest of the flour. Keep kneading until you have a nice and smooth dough. Don't worry if the dough is a bit soft, because it will guarantee a better final result. Let it rise for at least 3 hours at room temperature covered with a wet table cloth.

After the rising time put it in an oven tray with some olive oil underneath, cover it again, but this time with some plastic film and let it rise for another hour.

Now you have to season it with pomodori pelati ( you can use cubes or you can mix it) , mozzarella, basilicum and extra virgin olive oil. If you want you can add other ingredients that you like on top like sausage, onions, salame etc..

Bake it in a preheated oven for 15/20 minutes at 250 degrees.

RISOTTO SCAMPI E ZENZERO
Ingredienti (4 persone)
320g Riso Carnaroli
1 onion
1/2 glass of dry white wine
20 fresh Scampi
50g fresh ginger
40g Parmesan Cheese
Butter q.b. ( put it in the freezer and use it very cold it will stop the cooking process)
Extra virgin olive oil q.b.
Salt and pepper q.b.
Procedure:
Clean all the fresh scampi and use the skin and the head to make a broth with some vegetables too.
Mince the onion and the ginger with a knife and fry it slightly in some extra virgin olive oil.
Then add the rice and keep frying it slightly. When the rice is toasted ( it shouldn't be brown but warm wile touching it) add the wine and let it evaporate. Start adding your broth and keep stirring the rice while cooking it.
After 18/20 minutes your rice should be "al dente" , so you should add your fresh cleaned scampi 5 minutes before the end of the cooking process(if you like it softer keep cooking it for a few more minutes).
Adjust the taste with daltr and pepper
Switch off the fire and add Parmesan Cheese. When it will be nicely melted in the rice the add the butter an keep stirring it. The rice will appear creamy and that's what we want. Enjoy it!
