Hello everyone, how are you all doing? I hope everyone is healthy and is staying safe! Toko Kok Kita is still open to serve you, if you would like to buy some food. You are very welcome!

Today’s topic: a base dish. Sometimes people call it pasta or spaghetti. It looks like it, but it isn’t. I am talking about “bami goreng”. “Mie goreng” or “bakmi”. It is made from wheat flour, so it is not gluten free. It is originally from China. A long time ago, Chinese immigrants have brought the noodles to Indonesia. It is completely established in the Indonesian culture. Almost on every corner of the street, there is someone selling or making mie goreng. It is commonly not sold as a base, but as a dish in itself.

FYI, it is also a Chinese/Indonesian tradition to eat mie goreng at birthdays. The long strings of the noodles stand for a long life: panjang umur. And who doesn’t want a long, healthy and happy life? So, if it is your birthday, make sure you have some noodles. Or if you just love “bami goreng”, buy some as well.

Welcome in Kok Kita’s kitchen. Today we are talking about a chicken dish: ayam kecap! One of the most popular chicken dishes is ayam kecap. I put the ayam kecap in combination with long beans and an spicy egg. The ayam kecap sweet. It is made with sweet soy sauce. It is accessible to almost everyone, because it is not spicy. It is very delicious, if you like to try it.

I thought it would be fun if I give you a tip on how to make ayam kecap at home. It is very easy. My father, the big boss of Kok Kita 😜, made some ayam kecap today, but with chicken wings. First you have to fry the onion and garlic. In this case my father used ginger too, so add some of that with the garlic and onion. Then you add some chicken, then you add some of the thicker salt soy sauce and the light soy sauce. Ofcourse some sweet soy sauce, a little bit of sugar, some chickenpowder and white pepper. Hello everyone! How are you all doing? Welcome to Kok Kita’s page! Today I'm going to talk about one of my favorite dishes that we sell. I eat it almost every time I'm here, and that's quite often... I'm talking about the "sambal goreng tahu". It's made from tofu, of course. It's a little sweet and spicy, and a very good meat substitute: INSANE DELICIOUS (I'm biased🙄)! It is different from the tempeh, in which the tempeh is made from fermented soybeans, the tofu is made from fermented soy milk. So that's the difference between tofu and tempeh. Tofu has been around for a very long time now. It originated in China about two thousand years ago. Tofu has spread from the vegetarian diet of Buddism throughout East Asia. Kok Kita sells tofu as the “sambal goreng tahu". It is vegetarian and also vegan, so simply for almost everyone! Will you come and taste my favorite dish soon? Lets eat! And enjoy!

Today we are going to talk about sandwiches. Our dear Nur Laila Nafiah will assist me today. So, we sell sandwiches. You can choose what you want on it. Whether it is meat, chicken, fish or vegetarian, everything is allowed! Today we would like to you give three options. First of all, daging rendang. That's beef with mild coconut sauce. Udang Balado, shrimps in sweet and spicy sauce. Or maybe vegetarian with Tempé Tauco? Some Acar Ketimun is also added to the sandwich. That's pickled cucumber. That makes the bun a bit fresh. At Rochelle’s request, this week we are talking about the Risoles. Her favorite, I understand it too, because it is an incredibly tasty snack. It is very popular in Indonesia, but originally the Risoles is not from Indonesia, but from France. It ended up in Indonesia via the Netherlands. It originated before the Middle Ages and they sometimes call it the younger brother of the croquettes. It comes from the Latin word "russeus". That means "a little red" because of the color. The filling is often compared to ragout. It is wrapped in dough, then dipped in breadcrumbs and then baked. We sell them with chicken, but there are also vegetarian versions or ones with beef. Today we are talking about a well-known sauce: the sambal! Let's start with the basics. What is sambal made of? The lombok or the red pepper. In the 16th century, the Spanish and Portuguese brought the red pepper from South America to the colonies in Southeast Asia. That is how the lombok ended up in Indonesia. I would like to talk further about the preparation method of sambal, because in Indonesia it is not just put in a blender. It is prepared with a pestle, the "ulek", on a mortar, the "cobek". The peppers are crushed with the "ulek" into a mixture and various ingredients are added. Sometimes garlic, terassi or shallots, for example. It just depends on which sambal is being made. Hello everyone, welcome to toko Kok Kita! For the non-Indonesians or the non-Indonesian speaking among us: "Do you know what Kok Kita means?" Kok Kita means our cook. In this case, "kita" means ours. We also have a menu on our menu card "Menu Kita". This menu is for the small appetite, if you are not a big eater or for lunch. It is smaller than the "Rames", which I explained in my first video. Can you still remember? A Kita menu consists of a base dish, such as fried rice, noodles, yellow rice, rice noodles or white rice. You can choose a vegetable and a meat or three types of vegetables. Hello dear people! How are you? This heat is almost impossible, is it? But we keep on going. This week a dish that is ordered more often with this weather. It is vegetarian, it is served with a peanut sauce. Do you know what I'm talking about? Gado-gado! Gado-gado means mixed together. Literally "mix-mix". We sell it in the store with green beans, bean sprouts, cabbage, egg and the peanut sauce ofcourse! I prefer to add some extras, such as tempeh, tahu and potato, for example. You can add which vegetable you like best. The gado gado is served best when it is lukewarm. So a tip is to only heat the sauce. Then add some fried onions as a garnish, some sweet soy sauce to deepen the peanut sauce, and to add some crisp a krupuk or emping. If you want to make the gadogado sauce yourself, Ratu Culinair's peanut sauce is highly recommended. You only have to add hot water. Hi, welcome to Kok Kita! This week an ingredient, which is in many different dishes of Indonesian cuisine, "Gula Jawa". “Gula” means sugar. “Jawa” means Javanese. So Javanese sugar. Sometimes it is referred to as "Gula Aren". That's because the sugar is extracted from the Arenga palm. That is a palm tree species. Usually water is added and brought to a boil, making it a kind of syrup. It is very different from granulated sugar, it has a very complex deep flavor. Many people compare the taste with caramel or coffee. It is full of minerals and antioxidants. So if you need it, we sell it in our store. So come and get it! Today is the Feast of the Sacrifice: ‘Eid al Adha’. Indonesia is one of the largest Muslim countries. Therefore it seemed a good idea to tell what the Indonesian people eat with the Feast of Sacrifice. Eid al Adha is a national holiday in Indonesia. This holiday is to honour Ibrahim's sacrifice for God. It is a feast where families come together and a goat is slaughtered. From the meat of the goat ‘Sate Kambing’ is made. ‘Kambing’ means goat in Indonesian. The saus of the ‘Sate Kambing’ is the important part of the dish. What is in the sauce? Sweet soy sauce, freshly sliced ​​shallots and peppers and "jeruk limo". Jeruk limo is a small lime sort and it should not be missed, because the jeruk limo gives the sauce a fresh aftertaste. I also like to add peanut sauce to it. So mega tasty! For everyone who celebrates the Feast of the Sacrifice, have a blessed Eid al Adha! We Indonesians say, "Selamat Idul Adha!"
