Autumn is probably my favourite season to cook.

The first cold days, the start of the game season, mushrooms, chestnuts and root vegetables. Ingredients that naturally bring us back to butter, jus, classical sauces and the kind of cooking I love most.

Every year I take this season to cook one of my favourite classics, Lièvre à la Royale. On Thursday 29 October, it returns to Tannay as part of Le Menu Sauvage, a special menu we’ll cook for one night only.

For the evening, Job from De Gouden Ton will join us with a selection of classic Burgundy w**es to drink alongside the menu.

All we need these days to be happy is our terrace here on the island. Serving daily for the rest of summer is our Menu du Marché: 3-course meal with a taste of the season at Tannay for €58. A few plates from us, a bit of sunshine from the sky and several glasses from the bottle.
